From the end of November to half way through March, the Workshop offers customised cooking classes.
They are held in an area set aside in a resolutely contemporary room, next to the kitchens lorded over by the superb La Cornue oven, designed for Michel Trama.
Here, it is the students themselves - 5 to 6 in a class - who decide what they want to learn how to make.
Off-the-peg classes, so to speak.
And even before they put on their aprons, they are recommended to approach the "wall of fragrances", next to the cloister: there, all they need to do is brush the wall for the subtle aromas of lavender, thyme and bay to escape…
