The menu at L’Aubergade varies with the seasons and draws its inspiration from the market place.
However, there are some great classic dishes which have made the restaurant’s reputation: hamburger of foie gras, truffled potatoes en papillote served in a dish with a porcelain lid whose tiny chimney gives off the most delicious aromas, a brandade in millefeuille and Saint Honoré cream, or even the famous foie gras lollipops.
As for dessert, why not give in and try a cristalline of green apple or a double Corona Trama with chocolate and tobacco leaf.
This feast is served, in winter, in a dining room with its large stone fireplace under an Occitane cross; when the weather’s fine, in the cool of the cloisters.
